Serves 4 persons
Chicken and Coconut Soup / TOM KHA GAI
Coconut milk 550 ml
Galangal slices 40 gr.
Lemon grass 50 gr.
Kaffir lime leaves 5 each
Chicken breast sliced 250 gr.
Fish sauce 75 ml
Sugar 30 gm.
Lime juice 125 ml
Chili paste 20 gr.
Coriander leaves 20 gr.
Green Thai chilies 5 pcs.
Combine half the coconut milk with the galangal, lemon grass and lime leaves in a large sauce pan and heat to boiling. Add the sliced chicken breast, fish sauce and sugar.
Simmer for about 4 minutes, or until the chicken has been cooked. Add the reminding coconut milk and heat up again. Place some lime juice and chili paste in a bowl and pour over the soup, garnish with the chilies and the coriander leaves.
