Chicken in Red Curry with Bamboo-shoots / GAENG PET GAI SAI NOR MAI


GAENG PHED GAI SAI NOR MAI Diced, boneless chicken 400 gr. Red curry paste 1 tbsp. Coconut milk 2 cups Bamboo shoots (sliced lengthwise) 300 gr. Fish sauce 2 tbsp. Salt 1 tbsp. Sugar 1 1 tbsp. Kaffir lime leaves, halved 5 leaves Fresh red chili (sliced lengthwise into 5 pieces) 1 piece Sweet basil leaves 1 cup

In a pot, bring half the coconut milk to a slow boil, stirring constantly. Put in the red curry paste and cook until done(about 5 minutes) Add the coconut milk, bamboo shoots, sugar and fish sauce, and bring slowly to a boil. Add salt to taste. Add Kafir lime leaves, and chili, and remove from heat. Garnish with sweet basil leaves
