Serves 4 persons
Coconut Ice Cream / ICE-KREM MA-PRAUW
Coconut milk 3 1 cups
Sugar 1 cup
water 1 cup
Place the sugar and water in a pot and heat until the sugar is totally dissolved.
If necessary filter the solution through a cheese cloth, to remove any foreign particles, and the return to heat.
Continue heating to obtain a syrup thick enough to stick on a wooden paddle
When the syrup has cooled somewhat but is still warm, add the coconut milk and stir to mix well.
Pour the mixture into an ice cream freezer and crank about 45 minutes, or until it is completely stiff. Keep the ice cream frozen as it will meld very quickly.
Note: Freshly squeezed coconut milk, will make the best ice cream
