Serves 4 persons
Corn Pudding with cooconut Cream/ KHAU POD PIAK
Sliced kernels of corn 3 cups
Water 2 cups
Sugar 1 cup
Tapioca flour or corn flour in 1 cup of water 4 cups
Coconut cream 1 cup
Salt 1 tsp
Heat the water to boiling, add the corn, and boil, stirring constantly, until tender (5 minutes)
Add the sugar and the flour, stirring all the while, continue cooking. When smooth, remove from the heat.
Add salt to the coconut cream, bring to a boil, and then remove from the heat.
Place a portion of the corn pudding into individual dessert dishes and top with the coconut cream |
