serves 4 person
Crispy fried Noodles / MEE KROB
Thin rice noodles 150 gr.
Finely chopped pork 1 cup
Finely chopped shrimp 1 cup
Chopped garlic and shallot 1 tbsp.
Fermented soybeans 1 tbsp.
vinegar 1 tbsp.
Fish sauce 1 tbsp.
Palm sugar 4 tbsp.
Ground dried chilies 1 tsp.
Lime juice 1 tbsp.
Cake yellow beancurd, 1 piece
Garlic bulbs, thinly sliced 2 bulbs
Chilili, thinly sliced 1 piece
Chinese chives (gao choy) 3 springs
Bean sprouts 50 gr.
Cooking oil 3 cup
Thinly sliced kaffir lime rind 1 tbsp.
For finely noodles, fry in oil until crisp and golden, then drain. For thickly noodles, soak 15 mins in water, drain well, and then fry a few at a time
Heat 1 cup oil in a frying pan. Fry the garlic and shallot until fragrant, add the pork and shrimp, season with fermented soybeans, vinegar, fish sauce, sugar, and dried chilli. When tick, add the lime juice. Mix and season to obtain a sweet, sour, and salty flavor.
Reduce the heat, and add the noodles and beancurd; mix, and spoon on plates.
Sprinkle with pickled garlic, chilli, and thinly sliced kaffir lime rind . place bean sprouts and Chinese chives on the side of the plates.
