Serve 4 persons
Cucumber achar / ACHAR TAENG GUAW
Cucumbers 4 pcs.
Shallots 2 pcs.
Chili 1 piece
Vinegar 1 1/3 cups
Sugar 2 tsp.
Salt 1 tsp.
Coriander green, chopped 1 tbsp.
Wash the cucumber, cut in half lengthwise, and then cut across into thin slices. Cut the shallots and chilies into thin slices. Place the cucumber, shallot, and chili slices in a bowl.
Heat the vinegar, sugar and salt, stirring constantly until sugar has dissolved. When the mixture comes to a boil, remove from the heat. After the mixture has cooled, add it to bowl and garnish with chopped coriander green.
