Serves 4 persons
Fried Crab-cake in Shell / POO JAA
Meaty crabs 3 pcs.
Ground pork 1 cup
Minced coriander root 1 tbsp.
Minced garlic 1 tsp
Pepper 1 tsp.
Light soy sauce 1 tbsp.
Salt 1 tsp.
Eggs 2 pcs.
Breadcrumbs 3 tbsp.
Cooking oil 2 cup
Coriander leaves some
Red chili thinly sliced 1 tbsp.
Wash the crabs and then stem them whole. When done, remove all the meat. You may save the shells for stuffing.
Knead together the crabmeat, pork, and the all mixtures with 1 egg. when well mixed, pack this filling into cup or crab shells, steam until done. Allow it cool, then remove the filling out of cups. (In case the crab shells are used, do not remove the filling.)
Pour the oil into a frying pan and place on medium heat.
Beat the remaining egg well add, add onto the exposed surface of the crab filling, sprinkle with breadcrumb
When the oil hot, put the crab cakes into, until turns golden brown
Lift from oil, drain, garnish with coriander leaves and chili shreds, and serve with sweet chili sauce.
