Fried Rice Noodles with Prawns / SEN JAN PHAD GOONG
Dried narrow rice noodles soaked in water 4 cups
Prawns shelled and divined 8-10 pcs.
Chopped garlic 2 tbsp.
Shallots 2 tbsp.
Dried chilies, seeds removed, soaked in water 5 pcs.
Salt 1 tsp.
Cooking oil 1 cup
Palm sugar 1 cup
Tamarind juice 1 cup
Fish sauce 1 cup
Bean sprouts 50 gr.
Chinese chives cut into short lengths 100 gr.
limes 2-3 pcs.
Peel the garlic and shallot and slice dried chilies. Place the chili and the salt in a mortar and pound, then add the garlic and shallots and pound until ground and mixed thoroughly.
Heat the oil in a wok. When hot, fry the pounded chili paste, add sugar, tamarind juice and fish sauce to taste. Then add the prawns and stir, turning regularly until done.
Add the noodles, turning for a few minutes. Then, add the beans sprouts, and Chinese chives and mix.
Serve with Chinese Chives, bean sprouts and wedges of lime.
