Serves 4 persons
Green beef curry with Coconut-milk / GAENG KIEW WAAN NUEA
Beef 400 gr.
Green curry paste 3 tbsp.
Grated coconut
(or coconut milk) 400 gr.
2 1 cup
Cooking oil 1 tbsp.
Kaffir lime leaves 2 leaves
Fish sauce 1 1-2 tbsp.
Palm sugar 1 1 tsp.
Eggplant cut into bite-size pieces 150 gr.
Sweet basil leaves (horapha) 1 cup
Red chilies cut into strips 2-3 pcs.
Cut beef into long, thin slices.
Add 2 cups warm water to the coconut and squeeze out 1 cup coconut cream and 1 1 cups coconut milk.
Fry the curry paste in oil until fragrant, reduce heat, and add the coconut cream a little at a time, stirring until the coconut cream begins to have an oil sheen.
Add the beef and torn Kafir lime leaves and cook a short time ; then, pour the curry into a pot, add the coconut milk and sugar. Add fish sauce to taste, and heat. When boiling, add the eggplant. When the meat id done, add the sweet basil and chilies and remove from heat.
