Beef Curry in Sweet Peanut Sauce / GAENG PAENANG NUEA


Beef tenderloin, cut into thin strips 400 gr. Coconut milk 2 cups Paenang paste (or red curry paste) 3 tbsp. Ground roasted peanuts 1 cup Fish sauce 2 1 tbsp. salt 1 tsp. Palm sugar 3 tbsp. Fresh or dry Kaffir lime leaves 6 leaves Red chili thinly sliced 1 piece

Put 1 cup coconut milk over medium heat until some of the oil surfaces, add the curry paste and slowly bring to a boil, stirring constantly. Put in beef strips and cook for 5 minutes, add 1 cup coconut milk. Meanwhile, in a bowl , mix the rest of the ingredients except for the Kafir lime leaves. Add this to the curried beef, stir well and simmer about 15 minutes. Add the Kafir lime leaves and remove from the heat.
