Serves 4 persons
Grilled Lobster with Tamarind Sauces / GOONG YAI YANG SOD MAK-AM PIEK
GONG YANG SOD MAK-AM PIEAK
Lobsters or large prawns 1 kg.
Palm sugar 1 tbsp.
Fish sauce 1 1 tsp.
Salt 1 tsp.
Chopped coriander root 1 tbsp.
Thinly sliced shallot 1 cup
Coriander green 1 steam
Tamarind juice 2 1 tbsp.
Vegetable oil 1 1 tbsp.
Finely chopped garlic 1 tbsp.
water 1 tbsp.
Put the oil in a wok over medium heat and saut?© the garlic, shallots and coriander roots until fragrant, set aside.
Mix the palm sugar, tamarind juice, salt fish sauce and water in the wok, bring to a boil, and then add the garlic-shallot mixture.
Broil the lobster with the shell, then peel them arrange on a nice platter and pour the sauce over them.
Sprinkle with coriander leaves just before serving.
