Serves 4 persons
Grilled pork skewer / SATAY MOO
Lean pork 500 gr.
Ground roasted coriander seed 2 tsp.
Ground roasted cumin seed 1 tsp.
Finely chopped galangal 1 tsp.
Finely chopped lemon grass 1 tbsp.
Turmeric 1 tsp.
Ground pepper 1 tsp.
Salt 1 tsp.
Sugar 2 tsp.
Coconut cream 1 cup
Skewers 100 pcs.
Cut the meat into thin slices about 1 inch wide and 2 inches long.
Pound the coriander seed, cumin, galangal, lemongrass, turmeric, salt, and pepper in mortar until finely ground. Pour over the meat along with the sugar and the coconut cream. Mix thoroughly, and set aside to marinate 30 minutes.
Skewer the meat strips lengthwise and broil over a medium charcoal fire, brushing occasionally with the remaining marinade. Serve with sauce and relish.
