Kaeng Khua Curry Paste / NAM PRIK GAENG KHUA
Dried chilies, soaked in hot water for 15 minutes and de- seeded 5 each
Chopped shallot 3 tbsp.
Chopped garlic 2 tbsp.
Chopped galangal 1 tbsp.
Chopped lemongrass 1 tbsp.
Chopped Kafir lime rind 1 tbsp.
Chopped coriander root 1 tsp.
Salt 2 tsp.
Shrimp paste 1 tsp
Into a blender, put all ingredients except the shrimp paste and blend until well mixed. Then, add the shrimp paste and blend once more to obtain about 3 cup of a fine – textured paste.
This can be stored in a glass jar in the refrigerator for about 3-4 months.
