Minced chicken Salad / LARB GAI


Coarsely chopped chicken 3 cups Fish sauce 1 tsp. Ground chili 1 tsp. Ground pan-roasted rice 2 tbsp. Sliced shallots 5 pcs. Spring onions 3 springs Lime juice 1 cup Mint leaves 1 cup Chopped coriander leaves 2 tbsp.

Mix the chicken with fish sauce, place with little cold water in a dish, and heat up for 10 minutes until done. After removing from the oven and allowing to cool somewhat, knead to break up the mass of baked chicken. Add the ground chili, pan – roasted rice Shallots ,spring onion, and lime juice; toss gently. Add the mint leaves and coriander greens, toss once again, spoon in platter; serve with lettuce, Chinese cabbage, cucumber, yard- long- beans, and spring onions.
