Serves 4 persons
Minced pork Salad / LARB MOO
Ground lean pork 2 cups
Pork liver 100 gr.
Lime juice 5-6 tbsp.
Ground pan-roasted rice or 2 tbsp.
Ground chili 1 tsp.
Thinly sliced shallot 2 tbsp.
Spring onions, sliced 2 plants
Coriander plants, chopped 1 plant
Fish sauce 2 tbsp.
Mint leaves 1 cup
Mix the pork with 4 tbsp. lime juice and work squeezing movements of the hand ; then, squeeze the pork to drive out excess liquid. (Keep liquid for boil) Now, immerse the pork, then put liquid in pan and heated until boiled, stir fried the pork in the boiled liquid until done.
Boil the liver until done and then cut into small, thin slices.
Mix the pork, liver, pan-roasted rice, ground chili, shallot, spring onion and coriander plants; season to taste with the fish sauce and the remaining lime juice. Sprinkle with mint leaves and serve with yard-long bean, cabbage, shallot and spring onions.
