Serves 4 persons
Mung-Bean Balls in Coconut Milk / KHANOM BUA LOI TUA KIEAUW
Hulled mung-beans 1/3 cup
Coconut milk 2 cups
Palm sugar 1 cup
Glutinous rice flour 1 cup
Water 1 cup
Salt 1 tsp.
Soak the mung- beans in water for 2 hours. Remove them from the water and steam them until they are tender. Mash them to a fine paste.
Mix one cup of coconut milk with the palm sugar, add salt and bring to a boil, stirring regularly to prevent lumps from forming, and the remove from the heat.
Mix the mashed mung-beans with the sticky rice flour, adding a little water at the time. Knead them well to obtain a soft but firm dough.
Roll the dough into small balls of about 1 � diameter.
Poach those balls in boiling water until they float to the surface. Remove them from the water and place into the boiling coconut milk.
Heat it up once again, add the reminding coconut milk to it. And spoon it into individual serving dishes. This dessert is served lukewarm.
