Serves 4 persons
Peanut-Satay Sauce / SAU-CE SATHEH
Red curry paste 1 cup
Coconut milk 2 cup
Ground roasted peanuts 1 cup
Sugar 1 cup
Tamarind juice 1 cup
Salt 1 1 tsp.
Mix the peanut and the red curry paste together well.
Skim 1 cup of coconut cream in the wok until the oil surface; then, add the peanut – curry paste mixture and stir and turn to mix well. Continue to stir regularly
Season to taste with sugar and tamarind juice, and if you like, with salt. When the sauce has thickened, spoon into a serving bowl.
