Serves 4 persons
Black Beans in Coconut / TUA DRUM GAENG BUAT
Black beans 1 cup
Coconut milk 2 1 cup
Palm sugar 1 cup
Salt 1 tsp.
Soak the black-beans overnight, and boil them in the soak water until they are soft. Drain them and set aside.
Mix the coconut-milk with the salt and sugar, heat until they are dissolved, bring to a boil and filter through a cheese cloth, return to the heat.
Add the beans to the coconut cream stir in well and remove from the heat.
Spoon into individual dishes to serve.
