Serves 4 persons
Red Mushroom Curry / GAENG PET HED
Coconut milk 1 1 cups
Red curry paste 1 tbsp.
Water (or chicken stock) 1 cp
Fresh mushrooms (halved) 300 gr.
Fish sauce 3 tbsp.
Sugar 1 tbsp.
Fresh Kafir lime leaves, torn 3-4 leaves
Sliced whole medium red or green chili 1 each
Put half of the coconut milk in a wok over medium heat until boiled and some of the oil surface. Add the red curry paste and stir until thoroughly mixed.
Add the remaining coconut milk, chicken stock, mushrooms, fish sauce, sugar, Kafir lime leaves, and chili. Do not overcook the mushrooms
