Serves 4 persons
Savory stir-fried Pork with Yard-long Beans / PHAD PRIK KING KAP BUA PHANG YAU
Dried chilies 3 pcs.
Shallots 7 pcs.
Garlic bulbs 2 bulbs
Galangal 1 tsp.
Lemon grass 1 tbsp.
Pepper corn 5 pcs.
Coriander root 1 tsp.
Kaffir lime rind 1 tsp.
Salt 1 tsp.
Shrimp paste 1 tsp.
Ground dried shrimp 2 tbsp.
Other ingredients
Pork 300 gr.
Yard-long beans 200 gr.
Cooking oil 2 tbsp.
Palm sugar 1 tbsp.
Fish sauce 1 tbsp.
Kaffir lime leaves, chopped 3 leaves
Pound chili paste ingredient in motor until thoroughly ground and mix.
Wash pork, cut into long, thin sliced and marinate in 1 tsp. Fish sauce.
Wash yard-long beans, cut into 1 inch lengths, boil until just cook, and remove.
Heat oil and fry the pork until done, remove and set aside.
Put the chili paste in the pan, fry until fragrant, then add the pork, sugar, fish sauce, and yard-long beans. Stir to mix. When done, scoop up onto serving plate. Top with Kafir lime leaves
