Serves 4 persons
Sour & Spicy chicken Soup / TOM YUM GAI
Boneless chicken meat, diced 400 gr.
Chicken stock 3 cups
Straw mushrooms, halved 100 gr.
Cherry tomato 6 pcs.
Lemon grass stem, cut into short lengths 1 stem
Kaffir lime leaves, torn 2-3 leaves
Fish sauce 3 tbsp.
Lime juice 4 tbsp.
Sugar 1 tsp.
Hot chilies, just broken with pestle 5-6 pcs.
Place the stock in a pot, add the lemon grass and Kafir lime leaves, and bring to boil over medium heat. Add the chicken meat, mushrooms, fish sauce, lime juice and sugar; cooking slowly and uncovered for 10 minutes. Do not stir. Then add the tomatoes, and chilies and cook for 5 minutes. Remove from heat.
