Serves 4 persons
Sour & spicy Shrimp Soup / TOM YUM GOONG
Large prawn, shelled and de veined 6 pcs.
Chicken stock 3 cups
Mushrooms, halved 200 gr.
Lemon grass stem, cut into short lengths 1 stem
Sliced galangal 4 tbsp.
Lime juice 3 tbsp.
Fish sauce 3 tbsp.
Hot chilies, just broken with pestle 5-6 pcs.
Kaffir lime leaves, torn 2-3 leaves
Coriander plants, chopped coarsely 2 plants
Heat the stock to boiling. Add the lemon grass, galangal, prawn and mushrooms.
Season to taste with lime juice, fish sauce and chilies. Add Kafir lime leaves and chopped coriander, remove from the heat, and serve hot
Instead of chilies, 1 tsp. Ground pepper may be mixed with the stock.
