Spicy Glass-noodle Salad / YUM WOON SEN
1 tbsp.
Thinly sliced coriander root 1 tsp.
Thinly sliced bulb of pickled garlic 1 bulb
Chili 1 piece
Vinegar 1/3 cup
Sugar 1/3 cup
Salt 1 tsp.
Ingredients for salad :
Short lengths of scalded glass noodles 2 cups
Thin slices of boiled pork 1 cup
Thin slices of boiled pork liver 1 cup
Thin slices of boiled prawn 1 cup
Spring onions cut into short lengths 1 up
1-inch lengths of celery 1 cup
1 lettuce plant 1 plant
Crisp fried dried shrimp 1 cup
Pound the coriander root, pickled garlic, and chili well in a mortar. Place this mixture in a pot, add the vinegar, sugar and salt, and heat. When the mixture comes to a boil, remove from the heat and allow cooling.
Methods for salad :
Mix the noodles, pork, liver, prawn, spring onion, and celery. Add the dressing and toss gently.
Place the salad on a bed of lettuce and sprinkle with the fried dried shrimp garnish with red chili.
