Serves 4 persons
Spicy Mixed Vegetable Soup / GAENG LIANG
Shrimp meat chopped 60 gr.
Dry shrimps chopped 60 gr.
Shallots chopped 8 each
Shrimp paste 30 gr.
White peppers 10 gr.
Fish sauce 90 ml
Water 1 liter
Morning glory 100 gr.
Yellow gourd 100 gr.
Thai basil 50 gr.
Place the fresh and dried shrimp, shallots, shrimp paste and pepper in a mortar and pound to a fine paste. You may also use a food processor.
Place the fish sauce and water in a large sauce pan, heat to a boiling and add the pounded mixture and the other ingredients to it. Stir thoroughly, bring to the boil and cook for 3 minutes. Adjust seasoning to your taste and serve hot.
