Serves 4 persons
Spicy Sardine Salad / YUM PLA KRAPONG
Sardines 2 cans
Shredded ginger 2 tbsp.
Thinly sliced shallot 1 cup
Chopped spring onion 1 tbsp.
Mint leaves 1 cup
Lime juice 3 tbsp.
Salt 1 tsp.
Chopped hot chilies 1 tsp.
Lettuce 1 plant
Spring onions 1 plant
For the dressing, mix the lime juice with the pickled garlic, salt and chili.
Remove the eggs from the shells and cut into slices 1 - 1 inch thick. Place the slices in a mixing bowl together with the shallot, mango, and spring onion and toasted with the dressing; then, sprinkle with the mint leaves and arrange on serving platter with lettuce, cabbage, and carrot.
