Serves 4 persons
Spicy Squid Salad / YUM PLA MUEK
Sliced garlic 2 tbsp.
Hot chilies 2-3 pcs.
Lime juice 1 cup
Fish sauce 3-4 tbsp.
Other Ingredients :
Fresh squid 300 gr.
Thinly sliced shallots 1 cup
Thinly sliced young ginger 1 cup
Thinly sliced lemon grass stems 1 cup
Chopped spring onion 1 tbsp.
Mint leaves 1 cup
Wash the squid, remove the bone, eyes, and the skin. Cut across the squid into about 1 cm. Thick rings or score (i.e., make shallow cuts with knife the outer surface of the squid in a criss-cross pattern) and cut into 1 1 -inch pieces.
Scald the squid in boiling water. Do not leave the squid in the water long, for it will become tough.
Gently toss the squid together with the shallots, ginger, spring onion, lemon grass and the dressing and if necessary, season with additional fish sauce or lime juice.
Spoon the squid onto a platter, and sprinkle with mint leaves and serve with lettuce, cabbage, etc.
