Serves 4 persons
Spicy winged Bean Salad / YAM TUA
Winged beans 300 gr.
Steamed pork sliced into small pieces 1 cup
Coconut milk 1 cup
Fried sliced shallot 2 tbsp.
Coarsely ground roasted peanuts 2 tbsp.
Fish sauce 2 tbsp.
Sugar 1 1 tbsp.
Lime juice 2 tbsp.
Small pan-roasted dried, chilies 2 pcs.
Small roasted shallots 2 pcs.
Small roasted garlic bulb 1 bulb
Fried dried hot chilies 5-7 pcs.
Lettuce plant 1 piece
Immerse the winged beans in boiling water for 3 minutes and put in cool water, then cut into small pieces.
Bring the coconut milk to a boiling and the n remove from the heat. Divide into 2 equal portions.
Pound chili, the roasted shallots, and the garlic well in a mortar ; then add the sugar, fish sauce, and lime juice, stir to mix thoroughly, and transfer to a bowl.
Add the winged beans, pork, half of the boiled coconut milk, fried shallot, and peanut, toss to mix well, and then place on a bed of lettuce. Pour the rest of boiled coconut milk on the mixture. Serve with fried dried chilies
