Serves 4 persons
Candied Sweet-Potatoes / MAAN KIAUW
Large sweet potatoes 500 gr.
Sugar 1 1 cup
Water 2 cups
Lime water 1 1 cup
Wash the sweet potatoes well and peel them after. Cut them into 3 � thickness.
Soak the sweet potatoes in lime water at least for 1 hour and then wash them clean again before candying.
Place 2 cups water in a saucepan and heat. When the water starts boiling add the sugar and stir until it dissolves.
If necessary, filter the solution to remove foreign particles.
Bring the sugar solution again to a boil for 5 minutes and then add the sweet potatoes.
The sweet potato don’t need to be stirred, but should be turned from time to time.
Reduce the heat as the syrup thickens and continue cooking until the potato has soaked most of the syrup.
